Assignment Title: Case Study: Celiac Disease in Pregnancy
What I learned: During the project I learned how to examine case studies, research pathophysiology of health conditions, analyze lab values, calculate anthropometric data, and examination drug-nutrient interactions.
Reflection of the assignment: This assignment helped me to better understand how important it is for quality research when it comes to the well-being of others. The patient in my case study was suffering from celiac disease while pregnant and was struggling to keep food down. I had to use my critical thinking skills to create a meal plan that would facilitate a gluten free diet, as well as meet her nutritional needs during pregnancy. This assignment gave me an appreciation for my undergraduate courses and all that I have learned about nutrition. I enjoyed being able to gather up knowledge and skills from other course work in order to provide nutrition related education.
Relevance to the profession: Medical Nutrition Therapy is a very important aspect of any Food and Nutrition related profession. The skills provided to me in this class and through this assignment could only benefit me in any future career.

Assignment Title: Understanding the Therapeutic diet
What I learned: During the assignment I learned how to effectively communicate my knowledge for Medical Nutrition Therapy in certain disease states. I was able to share my knowledge in the form of a hospital in-service to diet aids and other foodservice employees.
Reflection of the assignment: This assignment helped me to better understand how challenging it can be for others to learn about disease states. For this assignment I was paired with another nutrition student and instructed to teach the class all there was to know about the Therapeutic diet and how it relates to hospital foodservice staff. We were to include the difference in oral supplements and enteral nutrition in our in-service. The training also provided staff with the knowledge of which patients could receive the different supplements and why it would benefit the patient. This assignment only furthered my excitement for working in a challenging and clinical setting.
Relevance to the profession: An understanding of Medical Nutrition Therapy is crucial to anyone in the field of dietetics. The skills and knowledge that were developed through this in-service assignment help to shape our awareness and understanding for different nutrition related matters. This assignment also taught me how providing vital nutrition information in an clear and informative way for the lay public is so imperative.
